Abstract: InordertostudythemeatqualitycharacteristicsofWannancatleand Simmentalcrossbredcatle,,42-monthold, healthy and disease-free male Wannan cattle and Simmental crossbred cattle (Simmental ? per breed) wereslaughteredand longissimusdorsibicepsfemorisandmusculusobliquusexternusabdominisweretakenforanalyses of meatqualityatributesand determinationof proximate nutrients,mineral elementsandaminoacids,etc.Theresults showedthatcomparedto Simmentalcrossbredcatte,biceps femoris from Wannancattleexhibitedsignificantlyhigherash and copper contents (P<0.05 )andmusculusobliquusexternusabdominishad significantlylower fatcontent (P<0.05 and highly significantly higher phosphorus content (P<0.01 ).The amino acid content of each muscle from both breeds met the FoodandAgricultureOrganization/WorldHealthOrganizationcriteriaforhigh-qualityprotein,butthecontentofumami amino acids in each muscle from Wannan catte was higher than that ofthe Simmental crossbred catte.The contents of C14;0, C18:2n-6 and C20:4n-6 in longissimus dorsi and the C20;4n-6 content of biceps femoris from Wannan cattle were significantly higher than those of the Simmental crossbred catle (P<0.05 ,the C16:1 content of longissimus dorsi and the C14;0 and C16:1 contents of biceps femoris were highly significantly higher (P<0.01) ), and the contents of C16:1 C17:1 and C20:4n-6 in musculus obliquus externus abdominiswere significantly lower( (P<0.05) .Interms of muscle fiber characteristics,themuscle fiber diameter of all three muscles from Wannan catte was highly significantly lower than that of the Simmental crossbred catle (P<0.01) ), whilethemusclefierdensityofbiceps femorisandmusculus obliquus externus abdominis was highlysignificantly higher (P<0.01) )andthatof longissimusdorsiwassignificantlyhigher (P<0.05) .Insummary,Wannanbeef hadhigher totalamino acidcontent,umami aminoacidcontent,totaleetialaminoacidcontentandbetermusclefibercharacteristics,showing the potential to be high-quality beef.
