Editor's Note: As one of China’s eight great culinary traditions, Sichuan cuisine,with its distinctive numbing, spicy, and aromatic flavors,has become a window for foreigners to experience Chinese food culture. Recently, we interviewed several international students studying in Chengdu. Through a series of questions and answers, we embarked on a fascinating journey into the world of Sichuan cuisine.

Several Thai students shared their surprise: back home, they're used to plenty of sour-and-spicy dishes and can usually handle heat. But in Chengdu, Sichuan dishes brought tears to their eyes! Naturally, they wondered: why is Sichuan cuisine so distinctively hot?
