中草药在改善猪肉品质中的应用研究进展

摘 要:中草药含有多种生物活性成分, 包括多酚、生物碱、多糖等, 具有抗氧化、抗炎、抗菌等功能。中草药不仅能促进动物健康, 还能改善肉品质和风味, 对饲料工业和人类健康具有重要意义。该文综述了中草药的特点、中草药在改善猪肉品质中的应用, 以期为中草药改善猪肉品质的研究提供参考。

Abstract: Chinese herbal medicine contains various bio⁃active compounds, such as polyphenols, alkaloids, polysaccharides, thanks to which Chinese herbal medicine has many pharmacological effects for example antioxidant, anti⁃inflammatory, and antibacterial. Chinese herbal medicine not only promotes animal growth and health, but also improves meat quality and flavor, which is of great significance to the feed industry and human health. This article reviews the characteristics of Chinese herbal medicine and its application in pork quality, in order to provide reference for further research on the effect of Chinese herbal medicine on meat quality.
