鸡头明胶提取工艺优化及产物特性分析

Abstract:To address the problem of low utilization rate and insufficient high-valuedevelopmentof chicken heads as arawmaterial,the hot water extractionof gelatin fromchicken heads wasoptimizedusing three different pretreatment methods,namelycid,alkalie-acid,andacid-enymaticmethods.Theeffectsofextractiontemperature (55,6and (20号 65°C )and time (3,4.5 and 6h )on the yield of gelatin were examined. The extraction parameters were optimized using single-factor experiments,andtheobtained product was characterized.The results indicated thatthe optimum extraction conditions that provided maximum yield of gelatin were determined as 60∘C and 6h for extraction temperature and time, respectively,irespectiveofthepretreatment methodused.Theyieldof gelatin was highestusingthealkaline-acidmethod (20 (10.08%) )followedbytheacid-enzymaticmethod (9.08%) withtheacid method givingthelowestvalue (2.52%) .The gelatinpreparedbythealkaline-acidmethodexhibitedthetypicalcharacteristicsof typeAgelatinandwascharacterizedby high protein content (73.33%) ,low ash content (0.90% ),moderate solubility (66.81%) ,wide pH adaptability,and excellent low-temperature procesingadaptability.Inconclusion,the alkaline-acid method enabled the simultaneous achievementof eficientextractionand high-valueconversionof gelatin from chicken heads.Thecomprehensive performance ofthe product Wwas significantly superior to that of the gelatin prepared by the acid and acid-enzymatic methods.
