益生菌在食品中的应用研究进展

摘 要:益生菌在食品工业中有广泛的应用,本文综述了益生菌在乳制品、发酵肉制品、保健品中的应用与发展,为拓宽益生菌的应用领域、研发新型高端益生菌产品提供一定的理论基础,并对其今后进一步的开发利用进行了展望。

Research Progress in the Application of Probiotics in Food

Abstract: Probiotics have made outstanding contributions to promoting human health and nutrition and have widespread applications in the food industry.This paper reviews the application and development of probiotics in dairy products, fermented meat products, health care products and functional food, provides a certain theoretical basis for broadening the application field of probiotics, research and development of new high-end probiotics products, and gives prospects for its further development and utilization.
