Abstract: Sugar-free tea beverage quickly swept the beverage market with its health characteristics of "zero calories, low heat and no burden". In order to clarify the market situation and product characteristics of sugar-free tea beverage, 132 kinds of sugar- free tea beverage covering 7 product types were analyzed by mathematical statistics, sensory evaluation and physical and chemical detection. The results show that Oolong tea, green tea and jasmine tea drink without sugar were the main types of sugar-free tea beverage in the market, while black tea and jasmine tea drink without sugar had the best comprehensive quality and were relatively stable. In addition, Oolong tea drink without sugar had better color, white tea drink without sugar had higher and purer aroma, black tea drink without sugar had better taste. There were different degrees of quality problems in various types of sugar-free tea beverage, such as "color browning, soup color turbidity, aroma or taste stuffy", especially sugar- free green tea beverage. There were significant individual differences in the contents of functional components in tea beverage. On the whole, green tea, jasmine tea and Oolong tea drink without sugar had higher levels of tea polyphenols. Green tea drink without sugar had the highest amino acid content. Dark tea drink without sugar had the highest level of caffeine content. Under the influence of the concept of healthy consumption, sugar-free tea beverage will be able to maintain the vitality of the market, but how to achieve highquality sustainable development is worth further discussion.
