臭氧处理对香菇贮藏保鲜效果的研究

摘要:本实验以香菇为原料,研究不同浓度臭氧处理对香菇贮藏保鲜效果的影响。测定贮藏期间香菇的失重率、呼吸强度、可溶性固形物含量、多酚氧化酶(PPO)活性、膜透率以及丙二醛含量变化,同时进行外观品质检查。结果表明,随着贮藏时间的延长,臭氧处理比对照组保鲜效果更好。

Study on the Effect of Ozone Treatment on the Storage and Preservation of Lentinus Edodes

Abstract: The experiment used Lentinus edodes as raw materials to study the effect of different concentrations of ozone treatment on the storage and preservation of Lentinus edodes. The weight loss rate, respiratory intensity, soluble solid content, polyphenol oxidase ( PPO ) activity, membrane permeability, and changes in malondialdehyde content of Lentinus edodes during storage were measured. Additionally,an appearance quality was checked. The results showed that with the extension of storage time, the ozone treatment had a better preservation effect than the control check.
